Why are triangles studied so heavily in mathematics?

It's because they're a sort of fundamental shape in the sense that many other shapes can be broken down into triangles. They're the simplest two dimensional shape.

They are very natural shapes. If you have an angle with two lines and want to make a closed figure, adding one line makes a triangle.

The sine function is also used in many areas of math such as probability and complex analysis.
